So when we were served CNY goodies, I remembered his FB status about the hard work that went into making them. I didn't know something as simple as fried crabsticks could taste so good...and addictive!
After helping them finish half a tupperware of the sticks, I was inspired to attempt it too and promptly went to the grocer to get myself some curry leaves since we already had the sticks at home.
defrosted crab sticks
sliced up
fragrant curry leaves
throw all into the pot for a swim in the hot oil
1st batch got burnt!
the 2nd batch - just nice. after mixing with the burnt ones, it had a variety of golden brown crunchy hues!

Eh, boil, then fry? Gotta try this. Got tons of curry leave in my garden but no use for it, till now! Thanks for the idea/recipe!
its deep fry, but i put into a pot to save oil :D learnt this from my ex-housemate.
Yeah, I do that too, a pot allows oil to be "deep" enough. Wow - your oil looks very clear and clean!
oh, no wonder you asked if i boiled it! lol! now that you mentioned it, it does look like a soup of crab sticks eh? :p but what does your "oil" look like then? put up pics when you've cooked this ya!
Yup. Will definitely put up pics ;) but on facebook la. Rarely blog these days. My oil would look kinda yellow? Also, some dishes might require an ingredient to be boiled first then dried then fried. But was wondering cause crabmeat stick can even be eaten raw :p
Can i substitute the curry leaves for lime leaves? Do u think it would do the same trick?

hmmm that's an interesting idea. maybe i should try to get myself some lime leaves too! i wonder if sprinkling curry/paprika powder after frying would be an alternative for you...
